Pimp eats - Paleo Banana Muffins


Came home one night last week and was craving this banana cake that my girlfriend Talia made for me at her house a couple of days prior. Since I like to eat clean when I'm home I wanted to create a healthier version, so I found this Paleo banana muffin recipe and played around with it. And that is when this recipe was born.
WARNING- There is no sugar in this recipe except for chocolate chips (I wanted to create something as guilt free as possible), but it still tastes delicious. Here is the final recipe below, let me know how it turns out for you. 

Ingredients
  • 6 bananas (or for more sweetness substitute 1 of the bananas for 1/2 cup of organic apple sauce)
  • 4 eggs
  • 1/2 cup almond butter (or any other types of nut butter- crunchy peanut butter is awesome as well)
  • 4 tbsp organic, grass fed butter
  • 1/2 cup coconut flour
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder (gluten free)
  • 1 tbsp vanilla
  • pinch of kosher salt

Directions
  • Preheat oven to 350 degrees Fahrenheit
  • Combine bananas, eggs, nut butter and butter in a mixing bowl
  • Than add to the mixture the remaining ingredients
  • Grease your muffin pans (it will make around 12 muffins) and pop it into the oven. Bake the muffins from 30-35 minutes. Make sure you check at the 30 minute mark to ensure the middle stays moist.
